Chinese Fried Rice

Chinese Fried Rice is a staple of Chinese cuisine and one of the most universally loved dishes in the world. Made with day-old rice for the perfect texture, it is tossed in a hot wok with fresh vegetables, scrambled eggs, and a savoury soy sauce seasoning. Simple, quick, and deeply satisfying.
Ingredients
- 3 cups cooked rice (preferably day-old)
- 3 eggs, lightly beaten
- 1 medium carrot, diced
- ½ cup frozen peas
- 3 spring onions, sliced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt and white pepper to taste

Heat the vegetable oil in a wok or large frying pan over high heat until smoking.

Pour in the beaten eggs and scramble quickly until just set. Push to the side of the wok.

Add garlic and stir-fry for 30 seconds until fragrant.

Add the diced carrot and stir-fry for 2 minutes. Add the peas and cook for another minute.

Break up any clumps in the rice and add it to the wok. Stir-fry everything together over high heat, tossing frequently.

Add the soy sauce and sesame oil. Toss to coat evenly.

Mix in the scrambled eggs, breaking into smaller pieces.

Season with salt and white pepper. Add the spring onions, toss once more, and serve hot.
Chef's Tips
The secret to great fried rice is using cold, day-old rice — fresh rice is too moist and will clump. Cook over the highest heat possible for a proper "wok hei" (smoky flavour).
